We tried another gluten-free pancake mix months ago and it was horrible; dense and gritty. We couldn’t choke them down! Rather than continue to throw my money away on inedible foods, we simple went without pancakes! Then, while at Whole Foods the other day, I saw this and decided to give it a whirl. I’m so glad I did!! These were perfect! Seriously, some of the best pancakes we’ve ever eaten!
We used rice milk in place of cow’s milk and Earth Balance in place of butter to make these dairy-free, as well. Then, I scattered sliced bananas and strawberries on top, and added a dash of pure maple syrup. Good eating!
