I like this recipe. It makes just a small batch, which is fine. These cookies have just the right amount of sweetness, in my opinion.

Here’s the original recipe.

And here’s my modified version.

Healthy Oatmeal Cookies (with Honey)

Ingredients:

Dry ingredients

1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
1 1/2 cups of Large Flake Rolled Oats (smaller flake is ok too)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 Tbsp Cinnamon

Wet ingredients

1/2 cup honey
1/2 cup coconut oil
1 egg (beat with 1 Tbsp Water)
1 tsp Vanilla
1 banana
1/4 cup shredded zucchini

Preparation:

In a large bowl, mix all the dry ingredients together.
In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray–your honey won’t stick).
Mix the wet stuff with the dry stuff. If the mixture seems too wet, add a bit of flour. If it isn’t binding together very well, you may wish to add an egg white.
COOL the mix for 20 minutes in the fridge.
Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
Bake for about 15 – 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

Since I’m stuck with taking all my photos with my cell phone camera, I’ll just post about one room at a time.

Here’s the boy’s room. I still have big plans for this room including paint, curtains, ledges for displaying Lego creations, a table and stools, and a central lighting fixture. Until then…

Bunk beds made by hubby

These are the bunkbeds that Ben made. The plans can be found on Ana White’s blog. Ben attached them straight to the wall on two sides and came up with the ladder on his own. They are STURDY and will probably last a lifetime. And they cost about $200. I don’t know of any other high-quality bunk beds that cost that little.

The shelves are from IKEA – as are the bedding, the rug, and the curtains (that we have yet to hang). Perfect for their industrial-style bedroom. Do you like the lamp on the chair? Yeah, this old house doesn’t have a ceiling light and their little lamp just isn’t enough. Can’t wait for that to change!

Wall opposite their beds

My step dad made those simple shelves for me when I was a kid. They’ve held up really well and go perfectly in the boy’s room. The table and ledges are going in that spot as soon as they are done…

Here’s our current Lego bin. I see a second one in our near future. Luke is Lego crazy. Eventually, the bookshelves will go in this spot, with some neat shelves hanging above them. The Lego bin and clothes hamper will fit under the table we’re going to add.

Closet

Years ago, when we were preparing the nursery for baby number two, we realized we needed to buy another dresser for Luke. I was too cheap and didn’t want to buy something flimsy/ugly so we decided to just trick out the closet and keep all of his clothes in there. That was two houses ago and we feel like we’ve struck gold in that department. Dressers just take up room. If you can add shelves and drawers to a closet, instead of using a dresser, you open up so much space! We have 2 wire shelves and 6 drawers in the closet and we fit all of their clothes and a LOT of their toys in that small space. Dressers are overrated!

So that’s the boy’s room, for now. Aside from paint and a light fixture, we have everything else – just need to get it finished. Then we’ll at least have one done room in the house! :)

I had to get out of the house for a bit today. Decided to head to Goodwill and another thrift store here in town. I didn’t come away with a lot, but am really happy with what I did get!

Basket for recyclables

We’ve been needing a basket for our recyclables for years and I just never got around to it. Most bins and trashcans are big or ugly. A friend uses a basket and I loved that idea. This basket was just $2.

Cute top, cute shorts, cute bag

I guess purple was the color of the day – which is fine by me! I found this cute top, for a couple of bucks. The shorts look like they’ve never been worn, and the bag looks like’s it’s barely been used!

We also found some Matchbox cars, NIB, for just fifty cents each, and an Usborne Books magic kit that Luke and Ben are so excited about. Overall, good day of thrifting!

I’ve been trying to do more baking again. My goal is to find healthy, but yummy recipes so that I can serve real breakfasts to my guys in the morning. I hate serving them cereal and oatmeal gets old after a while. I found this recipe and was pretty stoked at how healthy-ish it was already, and felt pretty certain I could make it even healthier.

I used whole wheat flour, cut the sugar in half, used coconut oil in place of vegetable oil, and didn’t use powdered sugar on top. They were just sweet enough and could easily be made sweeter by dusting them with the powdered sugar or even by drizzling a (perhaps caramel) glaze on them. Mmmm.

I like this banana bread more for the fact that it calls for whole wheat flour. The chocolate taste isn’t overwhelming. You could easily add some chocolate chips to up the choco factor, if you like.

I used coconut oil instead of vegetable oil and reduced the sugar. It was still good – not very sweet. Also, this was a bit dry so next time I’m going to add another banana and probably reduce the baking time a bit.

On Wednesday I baby sat my friends four kiddos. They are the boy’s age (two sets of twins). They all go along great and had a good time.

ThursdayI studied hard and then went and took my Art Appreciation final. Overall, I enjoyed that class, but an 18-week course compressed into 6 weeks is going to be difficult no matter what. Glad that’s over. Oh, and I got an ‘A’! Yay!

We had a playdate on Friday. It was nice to get out of the house. We haven’t done any playdates since we moved in here. In fact, our social live has been pretty stagnant for the past several months. Now that we are settled in it’s time to get out and see our peeps again.

On Saturday we went to a birthday party for one of our little buddies who turned 7. It was at the pool. We had a great time. Now that the boys are older and are more comfortable in the water, we really enjoy family time at the pool.

Today, Sunday, we enjoyed our morning at church. Went to Costco where I bought a stick vacuum (since we have nothing but hardwoods now) and we ate lunch. Ben’s mom and brother came over and we hiked out to our creek along the back of the property. There’s not much water in the creek, but the rock formations are really, really cool. I can’t wait for a cooler day. We want to go back and try catching some crawfish.

I made this years ago, but saw a recipe on The Girl Who Ate Everything‘s website and was inspired to make it again. I didn’t follow her recipe, but I’m including it for those who don’t like to “wing it”.

Basically, you just dice up your favorite fruits and then mix ‘em up. I diced a green apple, a Fuji apple, a kiwi, some strawberries, and some blueberries, tossed them together, and then threw a couple of spoonfuls of vanilla yogurt into the mix. I skipped the sugar and it was still plenty sweet.

For the tortillas, I just brushed on melted butter, sprinkled with cinnamon-sugar, and then baked at 350 for about 10 minutes.

Tasty, healthy, and filling. We has this for dinner tonight!

Like most recipes, you can make this as healthy or non-healthy as you like. I use all organic fruits, whole wheat tortillas, organic butter, went very light on the cinnamon sugar, skipped the sugar in the fruit, and added organic yogurt to the fruit instead. Yum!

I’ve never attempted coconut shrimp before, but I found this recipe on The Girl Who Ate Everything website. It has the recipes for the shrimp and the dipping sauce. Her recipe calls for pineapple preserves, but my store didn’t have pineapple anything so I chose pomegranate instead. Tasted great!

I really enjoyed this recipe and will definitely be making it again! I made up some rice with pineapple chunks, coconut oil, and jerk spice to go along with it and our meal was complete!
